The dog days of summer have arrived and everyone is trying to catch a break!
We just came out of a week long Excessive Heat Warning. When I originally checked the 10-day forecast and saw that KC area had an Excessive Heat Warning for an entire week I thought that it was mistake. How could it be that hot for that long? After all, Kansas is no tropical oasis. But oh no my friends! They were serious.
The humidity here is unreal! Our very first summer in the metro area had me avoiding the outdoors at all cost. Being a Colorado gal, I just could not get over how sticky and wet it was outside.
“You’ll get used to the humidity,” they said. “It won’t seem so bad next year,” they told us. Well, I hate to admit it, but maybe they were right. We are now in our second summer here and it is hot. And it is humid. But we don’t seem to mind it as much as last year.
That past week though! There was no adjusting to that type of heat. The word you are looking for to describe it was “oppressive” or maybe even “suffocating.” It was the kind of hot where the second you step outside you instantly wish you were back where you just left.
But enough about the heat! This is about the amazing things the heat gives you the best excuse to eat. Like watermelon, peach, and mint all mixed together in one bowl of ahhhh-instant relief! There is nothing like a cold watermelon full of juice to make any situation seem 100 times better. Except by adding in peaches and fresh (out of my own garden!) mint. All of the flavors play perfectly together to create a wonderful summer salad.
Start by cubing a watermelon. I used a mini melon and cut up the entire thing. You won’t need all of it for this, but it stores well in covered container in the refrigerator for a few days. Frozen watermelon cubes are also a welcomed addition to any drink – or just to snack on! Next slice the peaches – the riper the better! Gather all of your mint leaves together and roll them into one group then slice them into thin strips. Put the watermelon, peaches, and mint into a bowl and give it a few good stirs to let all of the flavors mingle. Voila!
If you are like me, you will probably eat a bowl full right away. But if you can let it sit for a few hours all of the flavors will come together and you won’t regret that you waited. Or heck, why not live a little and have one bowl now and one bowl later! 🙂
